Ingredients

Salmon grown in the open sea, fed naturally, without antibiotics and GMOs.
Atlantic salmon (salmo salar) 97%.
Sea salt and sugar 3%.

Packaging

The salmon side, with its skin and bay leaf, is vacuum-packed inside the elegant black and silver Upstream box.

Transport

For proper preservation during transport, the salmon whisker is packed in isothermal polystyrene containers together with ice gel with  a special food packaging film.

Storage

Fresh product, preservatives free, to be kept in the refrigerator at a temperature between 2 and 4 °C.
Expires in 30 days.

Tasting

The Prince side is delicate, sweet and consistent, a delicacy to be fully enjoyed. The Prince side also allows you to taste all the flavours of the salmon side, from the fillet to the classic and belly. The fillet is ideal to be savoured naturally with a little butter on toasted bread to appreaciate all its softness. The classic best expresses itself in an excellent salmon tartare; finally the belly, with its stronger taste, should be cut and served in slices. Salmon side

The Prince is the smallest of the salmon side, but not in taste! The different flavour nuances of the fillet, the belly and the classic cut are also found in this young, firm side. It is the perfect half of the fish. In the salmon side you can find the whole range of flavours that characterises the different cuts. After being cleaned, the Upstream side is marinated and smoked according to a unique recipe. Little salt and sugar alternate in the marinade, a delicate smoking leaves room for the goodness of the meat, thanks to the use of beech wood from the Emilian Apennines. Sweetness, flavour and smoky aroma, the notes of flavour in the salmon side follow one another with harmony and lightness.
