Ingredients

Salmon grown in the open sea, fed naturally, without antibiotics and GMOs.
Salmon (Salmo salar), sugar and sea salt.

Packaging

The belly is skinless in a vacuum bag, inside the elegant black and silver Upstream box

Transport

For proper preservation during transport, the belly is placed in isothermal polystyrene containers together  with ice gel with special packaging film for food products.

Storage

Fresh product, without preservatives, to be kept in the refrigerator at a temperature between 2 and 4 °C.
Expires in 30 days.

Tasting

With explicit references to the scents of the sea, the belly  is excellent to be enjoyed in purity, cut into slices,  cubes or sashimi. Perfect in combination with burrata or buffalo mozzarella, the belly can give a truly original touch to a gourmet pizza.

Salmon belly

The belly is the underside of the salmon, the lower part of a side, particularly soft and tasty. It is distinctive for its typically marine flavour, more pronounced than other cuts, savoury but not excessive.

In its unique characteristics, the belly retains the natural goodness of Upstream smoked salmon. It is a new cut, in which the elegance and lightness of the meat containing very little fat remain.

It is the result of a uniquw production method that enhances the authentic flavour of the salmon through marinating and smoking, both carried out in a special way: for marinating, small quantities of sea salt and sugar are used alternately; for smoking, beech from the Emilian Apennines, specifically thought to guarantee its delicacy.
