This kind of smoked salmon is aged with controlled humidity and temperature, according to Claudio Cerati’s rules. This control system allows to enhance and express all salmon flavours, from sweetness to saltiness, as a result of a unique process. Perfect to be cut with a knife into thin slices, it also can be grated as a bottarga.

Salmon reared in open sea, fed naturally, without antibiotics and GMOs.
Salmon (Salmo salar), sugar and sea salt.


The Reale di salmone stagionato is vacuum-packed and packaged inside an elegant Upstream black and silver cotton bag.


To ensure a proper storage during transport, the Reale di salmone stagionato is placed in isothermal polystyrene boxes together with gel ice with special packaging film for food products.


Product without preservatives, to be stored in the fridge at a temperature between 2 and 4 °C.
Shelf life about 120 days.
