Salmon side
The King side offers the delicious combination of all the flavours of smoked salmon in an outstanding format. It is the largest of the Upstream sides, where the sweetness of the fillet, the savouriness of the belly and the smoky aroma of the classic rear cut meet.
The King side allows you to enjoy different intensities of taste because it is the whole half of the fish from which the other cuts are made. This is obtained after cleaning, removing the head, tail, bones and thorns. The side retains the taste journey of flavours naturally belonging to salmon thanks to its conformation, and which in part depends on the marinating and smoking processes carried out using the Upstream method. Both guarantee unique taste nuances: for marinating, small quantities of sea salt and sugar are used, always alternating, and smoking with beech wood from the Emilian Apennines, specifically thought to guarantee its delicacy.
The result is a homogeneous side, delicate and elegant, which distinguishes itself for its natural goodness and lightness. Like all Upstream smoked salmon cuts, the King side is very low in fat.
