Ingredients

Salmon grown in the open sea, fed naturally, without antibiotics and GMOs.
Atlantic salmon (salmo salar) 97%.
Sea salt and sugar 3%.

Packaging

The salmon side, with its skin and bay leaf, is vacuum-packed inside the elegant black and silver Upstream box.

Transport

For proper preservation during transport, the salmon whisker is packed in isothermal polystyrene containers together with ice gel with a special food packaging film.

Storage

Fresh product, preservatives free, to be kept in the refrigerator at a temperature between 2 and 4 °C.
Expires in 30 days.

Tasting

The King side presents three different shades of taste. The first is the more delicate one of the fillet, which is soft, sweet and velvety, perfect to taste naturally, or with a little butter and pepper or on toasted bread. The more intense flavour of the classic rear cut is excellent if enhanced, in tartare, by a few drops of peat whisky, pepper and a hint of grated ginger. Finally, the slightly marine notes of the belly are enhanced when this part is served in small slices.

Salmon side

The King side offers the delicious combination of all the flavours of smoked salmon in an outstanding format. It is the largest of the Upstream sides, where the sweetness of the fillet, the savouriness of the belly and the smoky aroma of the classic rear cut meet.

The King side allows you to enjoy different intensities of taste because it is the whole half of the fish from which the other cuts are made. This is obtained after cleaning, removing the head, tail, bones and thorns. The side retains the taste journey of flavours naturally belonging to salmon thanks to its conformation, and which in part depends on the marinating and smoking processes carried out using the Upstream method. Both guarantee unique taste nuances: for marinating, small quantities of sea salt and sugar are used, always alternating, and smoking with beech wood from the Emilian Apennines, specifically thought to guarantee its delicacy.

The result is a homogeneous  side, delicate and elegant, which distinguishes itself for its natural goodness and lightness. Like all Upstream smoked salmon cuts, the King side is very low in fat.
